The Chaine des Rotisseurs is an international gastronomic society devoted to promoting fine dining and preserving the camaraderie and pleasures of the table. Although the modern day Chaíne began in 1950, our traditions and practices are based on those of the old French guild of roasters, whose written history dates to 1248.

The society has members in more than seventy-five countries. In Canada, there are twelve "Bailliages," or chapters, each headed by a Bailli and other officers who plan the chapter’s activities. These Bailliages are governed by the Bailliage of Canada, consisting of a Bailli Delegue and other national officers. Our membership includes individuals with a keen interest in fine dining, and professionals such as executive chefs and restaurateurs.

The Chaine dinners are always a great opportunity to really show of to your peers and push the envelope of current trends. The Royal Mayfair Team really went above and beyond for this dinner, a Halloween theme inspired the decor, and autumnal ingredients inspired the food. Fusing traditional elements of various courses together they came up with things like Fois Gras Creme Brule and Onion/Cherry/Rhubarb Chutney and corn bavrois for aspects of courses.
